Development of technology for the production of Turkish delight from melon crops on a natural base

چکیده

The reason for the current work is lack of technology to produce food from fruits melon crops, namely oriental sweets like soft sweets, based on processed overripe crops domestic growth. rationale need this research was demand creation manufacture food, a high percentage unsold substandard melons and watermelons. As well as possibility processing near areas cultivation manufacturing sweet products at small medium-sized enterprises. development meals will have positive impact expansion scope use crops. absence an established mechanism marketing brings great losses. In regard, issue finding solutions new ways selling relevant. study revealed producing Turkish delight watermelon melon. At same time, pulp more stable than that developed product outperforms control sample in all studied indicators. mass fraction fat 0.26 %, which 0.13 % raw materials. protein increased by 0.53 %. watermelon, carbohydrate content 3.7 times, 15.1 ascorbic acid slightly less, 7.22 mg/100 g, stored both under room refrigeration conditions, shelf life 5 days 21 days, respectively
